Thats a trick question yankee doodle didn’t have a horse, he had a pony, the feather was macaroni

The Macaroni Club was a notorious haunt in 1770’s London for men who took a bit too much interest in fashion, clothing, and each other. http://rictornorton.co.uk/eighteen/macaroni.htm
The reference to placing a feather in your cap… which was generally accepted as a symbol of honor in the US (a custom learned from the Native Americans in many places). However, in contemporary London culture, it was more of a symbol of homosexuality.
Technically, it’s not the feather he is calling “Macaroni”, but calling the act of placing the feather in the hat “Macaroni”… as in “The stupid hick thinks that’s fashionable, but he just looks like a poof.”
